GRAPE VARIETY & TERROIR

Bled of Sangiovese from 5 different vintages, each vintage with a different incremental ageing in wood. The recipe was born from the need to compensate for the production and quality changes due to climate change. Spontaneous grassing vineyards, cared for like a monumental park. Steep terrain, vineyards mainly by hand.

HARVEST

The harvest times for these wines are varied and unfortunately forgotten. ONLY manual in crates. Selection of the bunch directly in the vineyard: only first choice grapes.

PLANTING SIZE AND YIELD

Various. 4500 vines per hectare. 60 quintals of harvest per hectare.

VINIFICATION

Spontaneous fermentation in steel tanks. Long macerations. Aging: up to 5 vintages, each with different aging in wood from 48 to 6 months. Aging: bottle 6-12 months. Not filtered or clarified.
